Continuing the theme of avocado week, today I am sharing with you some recipes from my favorite place to be; Cafe Gratitude. If you don’t live on the West Coast or in Kansas City you may not have heard of this revolutionary restaurant; and you have my condolences. Cafe Gratitude is more than a restaurant There are six spiritual qualities woven through everything they do. They are:
- Loving your life
- Adoring yourself
- Accepting the world
- Being generous and grateful
- Experiencing being provided for.
The names of all their food and drink items are affirmations like “I Am Fulfilled” or “I Am Happy” Then when served the staff person will repeat it back to you as your order is laid before you; “You are Fulfilled” or loved or blessed etc. They are committed to “supporting our customers in starting to express who they truly are, mentally nourish themselves even before they start eating our healthy food.”
Besides creating Cafe Gratitude Terces and Matthew have developed books of recipes, on spiritual commerce and to introduce people to the concept of abundance. They also have an organic farm which helps supply their California restaurants.
Here’s a salad dressing made creamy with avocado rather than dairy.
A good way to incorporate avocado in your diet is through sauces and condiments. Spice up your day with a little Mole (it’s not just for Mexican dishes.)
However if you DO want a little Mexican food why not stuff an avocado with refried beans and top with spicy condiments? I’ve included recipes afterwords to help you make this a vegetarian dish.
